2018 CABERNET FRANC
WINEMAKING NOTES:
This Cabernet Franc was harvested in late October from our Estate Vineyard. These Grapes were destemmed and crushed into tank for fermentation, pump overs were done once or twice a day depending on the stage of the must. The wine macerated for a total of 25 days before being gently pressed and then transferred to 20% new French oak and the remaining to neutral French oak barriques. Malo Lactic fermentation occurred during the early months of the barrel aging process. The wine was then filtered before bottling.TASTING NOTES:
This Cabernet Franc has a beautiful deep Ruby colour with a fuchsia hue. On the nose there is a perfumed and lifted medley of concentrated ripe dark fruits. Fragrant notes of black raspberry, blackberry pie, cassis, new leather, vanilla and dates. Those Characteristics are mirrored on the palate in this concentrated and balanced wine. Fruit flavours of wild brambleberries and black raspberry and fig are on the forefront followed with crushed stone minerality, dried herbs and leather. This is a medium bodied wine with balanced acidity and a textured mid palate of layered, velvety tannins that gently coat the tongue. Enjoy the lingering flavours left behind on the medium length finish.FOOD PAIRINGS:
