2021 Limestone Block Chardonnay

Unobscured and unadorned, our annual snapshot of variety, vintage and vineyard: Chardonnay, 2021, Limestone Block. Handpicked grapes are whole-bunch pressed, and the juice is fermented in old foudre and neutral puncheons with wild yeasts. The wines stay on their ferment lees for 8 months with no lees stirring before being bottled. A little shy in its youth, this wine will develop and reveal itself in time. Lemon zest, oyster shell and green apple are apparent on the nose. The concentrated palate is crisp, saline and mineral.
