Harvested from the Mottiar Vineyard on October 7th at 21.9° Brix average grape sugar.From press, the juice filled mature (five-to-ten-year-old) 300-Litre French oak barrels. Equal portions fermented under wild and cultured yeast. Completing partial malo-lactic conversion, the wine aged in barrel for nine months in total before 156 cases were bottled in July 2022
