A classic Riesling from the brow of the Niagara Escarpment. 100% estate-grown fruit from 25-year old vines. Grapes are crushed and pressed in an extended pressing program for gentle juice extraction. After settling, the slow cool fermentation proceeded over 2 weeks with premium yeast that was specifically selected for this block. The young wine was aged on its fine lees for 6 months before filtering and bottling. The wine's zippy acidity balances the residual sugar, creating a perfectly balanced Riesling that displays characteristic notes of apple, petrol and citron, with ripe stone fruit in the background.
