You won’t want to miss our annual Icewine-themed dinner in our underground Trius Red Barrel Cellar hosted by one of our winemakers on Saturday, January 25th! You will be greeted with a Blushing Canadian cocktail on arrival to prepare your palate for a delicious meal before being seated at a communal table alongside one of our winemakers. Enjoy a 4-course Icewine-focused meal prepared by Executive Chef Frank Dodd and his culinary brigade, along with wine pairings selected by our in-house sommeliers and winemakers.

Trius Winery is a pioneer in the Icewine world, being one of the first Niagara estates to make it. Our grapes are harvested at –10 degrees Celsius and pressed frozen to release one drop of pure liquid gold. This results in concentrated flavours and a rich, sweet taste profile. When it comes to pairing Icewine with food, we recommend a small glass alongside aged and blue cheeses, rich savoury items such as foie gras and pâté, spicy foods, citrus fruits, sushi, dark chocolate, and fruit-based desserts.
