This single vineyard Wild Ferment Chardonnay hails from the Watching Tree Vineyard which is located in Lincoln Lakeshore and planted in 1989. Handcrafted from the heart of Niagara, this Chardonnay is medium bodied, rich with refreshing acidity.Round yet lively with lemon and stone fruit flavours, the wine was barrel fermented where it underwent a long and slow wild fermentation. The resulting wine is a complex dry white wine full of character that was aged in Fresh oak barriques for 10 months. Pair with roasted chicken, creamy pastas, grilled mushrooms and cheese plates.
