Our Underdog Rosé is made from Cabernet Franc and Gamay. These grapes were harvested for specifically making our Underdog Rosé, which means we harvested with the perfect balance of acid, sugar and flavours. The grapes were whole cluster pressed in our gentle Diemme bladder press and is pumped to tank for cold settling and clarification before racking to another stainless steel tank for alcoholic fermentation. We decide by taste when to stop the alcoholic fermentation to capture the best flavours and balance. Finally the wine was racked to a clean tank for stabilizing, fining and filtering before bottling.
