The 2021 Sully’s Mix is our first foray into an estate grown red wine blend. The estate Pinot Noir and Tempranillo, owing to a wet but mild harvest, was able to hang later than usual and was picked in mid-October. This resulted in light, yet flavourful fruit to work with. To build additional body and roundness, about 40% of the Tempranillo fruit was done as a whole cluster press, meaning that the stems remain in the must during the initial fermentation period. This also had the effect of leaving a pleasing note of pepper on the palate of the wine. To add further depth to the vintage, and to make the initial punching down process easier, a small amount of estate Chardonnay was incorporated into the Tempranillo during the initial ferment. Elevage took place in second fill French oak for the Pinot Noir, and neutral oak for the Tempranillo for a total period of 4 months prior to bottling in early May.
