Tasting Notes
This Pinot Noir has a lovely ruby colour with a soft pinkish hue. On the nose there are beautiful aromas of blackberries, sour cherry, and floral notes. As you dig deeper there are more subtle notes of earthiness, spice, and other barrel nuances. On the palate there are flavours of wild raspberries, cranberries, and sour cherries with undertones of floral notes and dried herbs. This Pinot is light in body with a bright acidity and firm tannins that will soften with age. Earthy nuances and hints of oak carry through to a medium-length finish.
Winemaking Notes
The grapes were hand harvested at the end of September from our Estate Vineyard. The grapes were destemmed and crushed into tank. The juice then underwent a five-day cold soak before being warmed to begin alcoholic fermentation, during which punch-downs were done twice daily. Once the alcoholic fermentation was complete the wine was then pressed off to a stainless-steel tank to settle before being racked to French barrels comprising thirty three percent new oak. Malo-lactic fermentation occurred naturally in barrel and was complete by the following spring. The wine remained in barrel for ten months before it was racked back to tank where it settled prior to filtering and bottling.
Food Pairing
This wine would pair beautifully with crispy duck pancakes; herbed ricotta stuffed mushrooms, or poached eggs in red wine sauce on toast.
