This Kirby Vineyard Rosé is made from 100% Gamay Noir from the Kirby Vineyard in the Niagara Lakeshore subappellation. The harvest date was chosen when the flavours were ideal and ripe. These Gamay Noir grapes had a 10 hour skin soak before we took off some of the juice from the crushed fruit. The juice was pumped to tank for cold settling and clarification before racking to a secondary tank to start alcoholic fermentation. This delicious rosé was then racked clean to another tank before a light fining and filtering took place and then we bottled.
