This wine originates from our Cave Spring Vineyard, nestled on a gently sloping terrace of the Niagara Escarpment overlooking Lake Ontario. In this hillside terroir, a combination of limestone-clay soils, elevation and moderating on-shore breezes delivers a singular expression of Gamay, exhibiting bold, invigorating fruit with overtones of pepper and spice. Medium in body with a creamy, pomegranate-tinged attack; the mid-palate is centred on juicy red currant fruit woven into refined tannins; the edges are supple, while delicate acidity provides lift and definition throughout; the tannins subside on the back end, giving way to concentrated black raspberry and blueberry fruit and lingering, savoury accents of fresh thyme and sage.
