Aging in French and American cooperage for 10 months has knitted together ripe tannins over a medium-bodied frame interwoven with a dash of sultry new oak, crushed red fruit, and a firm backbone of acidity which naturally marked the 2019 growing season. This elegant blend lends suppleness to the palate that allows for real pleasure now with aging potential for surely a decade. Pair with beef dishes such as a well-aged Ribeye steak lightly charred on the BBQ, a classic pot roast, or a rich Italian meat sauce. After dinner with aged cow's milk cheese such as cheddar or Comte. For lighter options, try it with a portobello burger or a roasted vegetable lasagna.
