Conspiracy Bianco 2018

On the nose are aromas of fresh apple, gooseberry, lemon curd and jasmine blossom. The palate has crisp acidity and bright flavours of lemon, pear, orange zest. With complexity and texture from the Ripasso method and long finish. The 2018 vintage benefited from a very hot summer, leading to ripe fruit with complex flavours. A Ripasso style wine with the Riesling and Sauvignon Blanc grapes harvested, pressed and fermented in stainless steel. The wine was then repassed over the skins and lees of our appassimento Sauvignon Blanc giving the wine added depth and flavour. Enjoy now, nicely chilled. This wine will continue at its best through to the year 2022.

Amarose 2019

A one of a kind, Amarone influenced rosé – inspiring the name of this flavourful wine. On the nose, the Amarosé holds aromas of wild strawberry, fresh peach, apricot, mango and Fuji apple. The palate has flavours of summer fruit to match the nose, and an elegant mid-palate weight finishing with a mouth-watering citrus acidity. Enjoy now to take full advantage of this wines vibrant fruit and freshness, it will continue to evolve well through to 2023.

Cabernet Sauvignon 2016 

With aromas of black cherry, blackcurrant, dark plum, vanilla bean, smoke, cedar and rich leather. The palate has an impressive mouthfeel with juicy flavours of ripe cherry, blackcurrant, blackberry and plum supported by big silky tannins and integrated oak notes. All leading to a lengthy dry finish. The 2016 vintage was hot and sunny, the vines produced fruit with very ripe flavours and lower acidity – a great Niagara vintage! The exceptionally ripe Cabernet Sauvignon grapes were harvested in late November. The drying period was 100 days, and after pressing the wine was aged 18 months in French and American oak barrels. This wine is drinking beautifully now with its juicy flavours and firm tannins. The 2016 Cabernet Sauvignon will continue to evolve in your cellar through to 2026.
