Introducing Fracette, a New Sparkling Wine from Niagara Made Using Icewine

Niagara winemakers are coming together to create something new: a sparkling wine category that combines two of Ontario’s strengths: VQA Sparkling and Icewine.

Writing for The Globe and Mail, Christopher Waters explores the story behind Fracette, a emerging Ontario sparkling wine category that uses Icewine as the sugar source for secondary fermentation. The result is a dry, refreshing style that brings some of the richness and fruit character of Icewine to sparkling wine without the sweetness.

The feature looks at how six Ontario wineries worked together to develop the new category, from years of research and winemaking trials to establishing the standards that define Fracette. Further, it explores what makes the style distinctly Ontario and how our producers are working together to introduce a new expression of cool-climate sparkling wine.
