These Chardonnay grapes are Estate grown and harvested on September 24. the grapes were gently pressed, and the juice was then transferred to stainless steel tanks. after cold settling the juice was racked to another stainless tank for fermentation. The must underwent a cool long ferment to help preserve those fresh fruit forward characteristics. The ferment finished dry, and the wine was left on its lees for a couple weeks before racking to a new stainless-steel tank. The winemaker prevented malolactic fermentation to help preserve those fresh acids. Prior to bottling the wine was fined and filtered.
The colour is a pale straw yellow with hints of green and gold shining through. The nose is bright and focused with notes of Asian pear, fuji apple, and citrus. The palate mirrors that of the nose with tree fruit and lemon citrus. There is a minerality note mid palate and a refreshing acidity that carries through the medium length finish.
